INGREDIENTS
3 medium sweet potatoes (steamed and pureed)
2 cups Quinoa (cooked)
2 Eggs
½ cup buckwheat flour
1 tbspn corn flour
1 teaspoon fresh ground black pepper
1 teaspoon Himalayan salt
4-6 tablespoons coconut oil (to pan fry them)
METHOD

Stem and puree sweet potatoes and cook the quinoa.

In a medium sized bowl, place all of the ingredients and mix well.

In a medium sized non-stick pan, heat up about 4-6 tablespoons of coconut oil. Take large spoonfuls of the mixture to make 6 patties in the pan and slightly flatten the tops. Cook for about 3-4 minutes on each side or until golden brown.

Place on paper towel to cool.
