INGREDIENTS

  • ½ cup almonds

  • large handful of medjool dates, pitted and roughly chopped

  • ⅓ cup shredded unsweetened coconut (plus ¼ cup for rolling)

  • 1 tablespoon coconut oil

  • 1½ tablespoons cocoa powder

  • pinch of salt

  • 1 tablespoon water

 

METHOD

  1. Place almonds in a food processor/blender and pulse until roughly chopped

  2. Add all other ingredients, turn food processor on until mixed well.

  3. Roll out the mixture into bite sized balls.

  4. Coat each ball in the remaining shredded coconut.

  5. Refrigerate until they go hard.

  6. Store in the fridge in a container or plastic bag for up to two weeks.

  7. Sit back and enjoy!
