INGREDIENTS

  • 250g aubergine flesh, grilled until soft

  • 1 garlic clove, crushed

  • zest and juice f ½ lemon

  • 1 heaped tsp tahini

  • parley leaves

  • mint leaves

  • 3 to 4 Tbsps olive oil

  • salt and pepper

 

METHOD

  1. Once the aubergine has been grilled (or oven baked) tear it into strips and add to a thermomix bowl or normal blender bowl with all the other ingredients.

  2. Mix for about 5 seconds speed 5 until roughly chopped and mixed or longer for a smoother consistency.

  3. Enjoy with dips and crackers or bread.
